Sunday Dinner at My House

Motherly Fit's Stuffed Shells

Ingredients

1 12-ounce package jumbo pasta shells

1 Tbsp olive oil

1 Small yellow onion finely chopped

1 pound lean ground beef or sausage.

1 Tbsp minced garlic (This is what the recipe calls for, but I never measure it out. I just use about 3 large cloves of garlic minced)

1 large egg

16-ounces ricotta cheese

10-ounces chopped frozen spinach, thawed, squeezed dry, chopped further (or 10 ounces chopped fresh spinach)

1 cup grated Parmesan cheese

1 Tbsp chopped fresh basil or 1 teaspoon dried basil

1/2 teaspoon salt

1/2 teaspoon ground black pepper

1 28-ounce can tomatoes with herbs, tomatoes broken up (or your favorite tomato or pasta sauce)

2 9x13 shallow baking dishes

How to Cook It!

1 Bring a large pot of salted water to a boil (1 teaspoon salt per quart of water). Cook the pasta shells according to the instructions on the package. Drain, rinse in cold water, and set aside.
2 Heat olive oil in a large skillet on medium high heat. Add the onions and cook until softened, about 5 minutes. Add the sausage to the pan, breaking up the sausage into smaller bits. Cook sausage until cooked through, and no pink remains, about 5 minutes. Add the garlic and cook until fragrant, about 30 seconds to a minute more. Remove pan from heat.
3 Beat the egg lightly in a large bowl. Mix in the ricotta, chopped spinach, 1/2 cup of the Parmesan cheese, basil, bread crumbs, salt, pepper, and sausage mixture. Fill each cooked pasta shell with some of the ricotta, spinach, sausage mixture.
4 Spread 1/2 cup chopped canned tomatoes over the bottom of each of the baking dishes. Arrange the stuffed pasta shells in the dishes. Spread the remaining tomatoes over the top of the pasta shells.
At this point you can make ahead, to freeze (up to four months) or refrigerate before cooking. (If freezing, cover with foil, then wrap with plastic wrap.)
5 Heat oven to 375°F. Cover the pans with foil and bake for 30 minutes, until hot and bubbling. Remove foil and sprinkle with remaining Parmesan cheese, bake uncovered for 10 more minutes.
Serves 8.

A side note: Sunday is my "FREE DAY". By "Free Day", I mean that Sundays are the days when I can eat whatever I want, as much as I want. This meal is VERY fattening, and is not meant to be eaten on a daily basis. So, on this Sunday, I am going sit back, watch a movie, relax and eat some stuffed pasta! NOM NOM NOM!

The Final Birthday for a While

Between the last week of July and the middle of September, a large majority of our family has birthdays.  That includes the chica above!

Happy Birthday to my oldest baby girl!

While I am happy that it is her birthday, and I do hope that she has a good one, I must admit that I am glad that the birthdays and subsequent planning/entertaining are over...Well, at least until THANKSGIVING!

Remembering 9 / 11 ---- 10 Years Later

I am sure that every American remembers where they were, what they were doing and how they felt on this fateful day. I know that I do. 

I was washing the breakfast dishes while the girls were watching "Blue's Clues", when my dad called and asked if I was watching the news. He told me to turn it on, so I did. I was in shock. A plane had crashed into one of the "Twin Towers." As I was watching, I saw a second plane crash into the other tower, and all I could think was "What in the hell is happening?" I don't think my brain was comprehending what my eyes were seeing. I remember watching the top of one of the towers fall and no one reported that it fell for a what seemed like 5 whole minutes. I actually thought to myself, "Maybe I did not see it fall."

I have never before or since felt so helpless. That is the only way I can describe what I felt. I cried for the families who lost loved ones that day. I cried for those who were supposed to be there, but by some miracle they weren't.

10 Years Later, I still remember like it was yesterday!

Gonna Have to Try It

I was catching up on some magazine flipping (because I don't really read them) this weekend, and found a new exercise that I am going to have to try out this week. 

It is called a "Preacher Curl". 

I could not find a picture of EXACTLY what I wanted, but you get the point.  According to Fitness, you can do this exercise by sitting backwards in a chair, hanging your arms over the back, and curling! 

I will take a picture of me trying this one out, and give you an update!

What ???

I was reading "9 foods not to give your children" from Team Beachbody, and I have to tell you that there is no way that I am giving up #5.

Number 5 on this list was FRENCH FRIES!  Sure, there is no reason to eat them regularly, but I am sorry-I AM REFUSING!!!!

Happy Labor Day

I hope you are all enjoying your long weekend.  I am spending it with my family!

I slept in a little this morning.  Kiddos don't have school, so I don't have the morning rush of trying to:

  • Workout
  • Get breakfast
  • kids up
  • kids ready
  • kids out the door                     
  • Yeah-You get the picture!!!
 My workout is a little later today, and that is just fine with me.  We are going to grill out on the unofficial last day of SUMMER!
